Spiced Pumpkin Bread

Super moist pumpkin bread with just the right amount of cinnamon, ginger, nutmeg and cloves. Great for breakfast or anytime snack.

Spiced Pumpkin Bread

Preparation Time: 10 minutes | Cooking Time: 1 hour | Total Time: 1 hour and 10 minutes

Servings: 24 | Yield: Makes 2 Loaves

INGREDIENTS

1 3/4 cups granulated sugar
3/4 cup butter, room temperature
4 large eggs
15 oz. pumpkin puree
3/4 cup milk
3 1/2 cups bread flour
1 1/2 tsp. cinnamon
3/4 tsp. ginger
3/8 tsp. nutmeg
3/8 tsp. ground cloves
1 tbsp. baking powder
1 tsp. salt
1/2 tsp. baking soda

DIRECTIONS

1. Preheat the oven to 350°F. Spray two loaf pans with cooking spray.

2. In a large bowl, cream the sugar and butter until smooth and creamy. Add the eggs and beat until fluffy. Add the pumpkin puree and the milk and mix well.

3. In a large bowl, combine the flour, cinnamon, ginger, nutmeg, cloves, baking powder, salt and baking soda and mix well. Add the flour mixture to the pumpkin mixture and stir until moistened.

4. Pour the batter into the loaf pans. Bake for 60 minutes. Cool the bread in the pans for 5 minutes. Cool bread completely on wire racks.

Honey Wheat Bread

I love the smell of homemade bread baking in the oven. I confess to being somewhat lazy when it comes to bread baking. I let the bread machine do all of the hard work and because I don’t care for baking the bread in the bread machine I just use the dough cycle. I do the final rising and baking in the oven.

I found this recipe on for Honey Wheat Bread on Allrecipes and modified the directions slightly for my baking preference. This is so good. It’s not 100% whole wheat, but you can easily substitute wheat flour for the bread flour. This bread is perfect as is, not too dense and just the right flavor of wheat.

Honey Wheat Bread

Preparation Time: 5 minutes|Cooking Time: 30 minutes
Inactive Time: 2 hours|Total Time: 2 hours and 35 minutes

Servings: 10|Yield: Makes 1 Loaf

INGREDIENTS

1 1/8 cups warm water
3 tbsp. honey
1/3 tsp. salt
1 1/2 cups whole wheat flour
1 1/2 cups bread flour
2 tbsp. vegetable oil
1 1/2 tsp. active dry yeast

DIRECTIONS

1. Add all of the ingredients according to your bread machine directions. Use the dough cycle. Once the dough cycle is complete remove the dough from the pan.

2. Punch the dough down and place in a greased loaf pan and turn to coat the dough. Cover and let rise in a warm place for 30 minutes or until doubled in size.

3. Preheat the oven to 350°F. Bake 30 to 40 minutes. Bread is done when internal temperature reaches 190°F or the bread sounds hollow when tapped.

Moist Cheddar Muffins

Serve these moist cheddar muffins with chicken soup and apple pie.

INGREDIENTS

2 cups all purpose-flour
1/3 cup granulated sugar
1 tbsp. baking powder
1/2 tsp. salt
2 large eggs
1 cup milk
1/4 cup vegetable oil
1 cup shredded Cheddar cheese

DIRECTIONS

1. Preheat the oven to 400°F. Spray a 12 cup muffin pan with cooking spray.

2. In a large bowl, combine the flour, baking powder and salt and mix well. In a small bowl, beat the eggs. Add the milk and oil and mix well.

3. Add the milk mixture to the flour mixture and stir until blended. Stir in the Cheddar.

4. Pour the batter in the muffin cups 3/4 way full.

5. Bake for 20 minutes or until golden brown. Remove the muffins from the pan and cool on wire racks.

Servings: 12
Yield: Makes 12 Muffins
